Beer isn’t just for drinking; it’s for cooking, too! The Brew York, New York kitchen is experimenting with beer-based food recipes, and when they actually work, we’re sharing them with you! Here’s a recipe for a white bean chili using Narragansett Lager. Naturally, that’s not the only beer you can use, but we recommend a lightly-hopped, light-bodied American Lager for this recipe so it doesn’t overpower the heat of the green chiles. We think this is the perfect simple, hearty recipe for those cold winter months.Happy cooking!
Pork & White Bean Beer Chili
(Serves 2-4)
INGREDIENTS
3/4 lb. ground pork
12-ounce can of Narragansett Lager
2 4-ounce cans of chopped green chiles, hot or mild, depending on desired spiciness
1 16-ounce can of white beans
1 onion, diced
3 tomatillos, diced
1 tbsp. all-purpose flour
vegetable oil
chili powder
garlic powder
black pepper
Kosher salt
sour cream (optional)
STEPS
1. Prepare the ground pork with a rub of roughly 2 tsp. each of chili powder, garlic powder, and black pepper. 2. Add vegetable oil to a large pot and brown the pork on medium-high heat. 3. Add diced onions to the pot, stirring occasionally until slightly brown and carmelized. 4. Bring pot down to low heat and add all other ingredients, including the beer, tomatillos, green chiles, flour, 3 pinches of salt, and the full can of white beans with liquid. 5. Cover pot and simmer for 1 1/2 to 2 hours, stirring occasionally. 6. Serve in a bowl with a dollop of sour cream (optional)
