The other day we all went to Jillian's Sports Bar in Somerset, MA for lunch. Being near Fall River I was really in the mood for some Portuguese style codfish. Low and behold one of the specials were Portuguese codfish cakes. Growing up in New Bedford, my mother made these quite a bit. Nice mix of fish and potatoes fried to golden perfection. When they arrived I had expected patties and instead they were lumps deep fried goodness. Sort of like a clam cake. Delicious as they were I longed for the homestyle. So on the way home I stopped off at the market and picked up some fresh cod. Made the cakes the way I rememberd for dinner with a side of spicy black beans. Delicious and comforting! Here is the recipe:
Ingredients
* 2 large red potatoes, cut into quarters
* 1 pound cod fillets, cubed
* 1 tablespoon butter
* 1 tablespoon grated onion
* 1 tablespoon chopped fresh parsley
* 2 cloves of garlic
* 1 egg
* 3 tablespoons extra virgin olive oil for frying
* salt and pepper to taste
Directions
Place the potatoes in a large pot of salted water, bring the water to a boil. Let the potatoes cook until they are almost tender. Add the fish to the pot and let the fish and potatoes cook until they are both soft. Drain well and transfer the potatoes and fish to a large mixing bowl. Add butter, onion, garlic, parsley, and egg to the bowl; Season with salt and pepper to taste and mash the mixture together. Mold the mixture into patties. Heat oil in a large skillet over a medium-high heat. Fry the patties on both sides until golden brown. Drain on paper towels before serving.
